Recipe #4 - A Winner!
I tried another new recipe for supper tonight. It was a hit with everyone...score!
My little one, who hardly ever even sits still through a whole meal, even had SECONDS, so I will definitely be making this again. It was super easy and quick...just what I love!
Pepperoni/Meat Pizza Bake
Ingredients:
1 can (16.3 oz) Pillsbury Grands Homestyle refrigerated original biscuits
1 can (14 oz) pizza sauce
2 cups finely shredded mozzarella cheese (8 oz)
20 or so slices of pepperoni (1 1/2 inch)
1 lb. lean ground meat
Directions:
1. Brown ground meat (drain if needed).
2. Cut each biscuit into 8 pieces; toss with pizza sauce, pepperoni, cooked ground meat, and 1 cup of the cheese.
3. Spread in sprayed 8.5 x 11 inch glass baking dish. Top with remaining 1 cup of cheese.
4. Bake at 375°F 24 to 28 minutes or until golden brown and bubbly (make sure the bottom dough is cooked well).
That's it! Now that's what I call super easy...and mighty tasty too. What I love is that you can add to this anything you like on a regular pizza: onions, bell peppers, mushrooms, anything!
This made enough for my family of 4 to have leftovers tomorrow, even with everyone except for me having seconds. :) I served it with corn and salad.

Snowy Layouts
I've had more than enough of the snow, how 'bout you? In fact, it's snowing outside right now. This is TEXAS for Pete's sake...it's only supposed to snow once a year here! I will admit, however, that I love pictures taken in the snow. There's something about that pretty solid white background that makes everything seem a little brighter and colors more saturated. I recently scrapped some of our vacation pictures from went we went to New Mexico for a few days back in January.
These first two were made using my December kit from Scrapbook Deals 4 U:

These next two were based on sketches by Julie Bonner, using papers from My Mind's Eye:

I totally hate scrapping pictures of myself, but the "I've Learned..." layout was done for a challenge at HYWWP. So, there ya have it.....if you're stuck in snow, you might as well make the best of it and take some pictures in it! :) Hope you are staying warm on this snowy February Tuesday.

This One's for the Girls
God has placed so many special women in my life. I cannot help but think of my scrapbooking buddies at Have Your Way With Paper whenever I watch this. In fact, I was just talking to one of them today about how badly I wish I could just jump in the car and go meet her for coffee or get the kids together to play. Unfortunately, we are all scattered across the U.S., and this just isn't possible.
I think we all long for this kind of relationship with one another. That true "sisterhood" bond. Maybe you have a lot of women in your life you have this with....maybe you have just that one special friend. Maybe you haven't met that friend yet. If you do have friends similar to the ones mentioned in the above video....take the time right now to thank God for putting them in your life. I know I just did.

Winter Blahs....

We usually don't have much of a winter here in Texas. Sure, it gets cold and ices over a couple of times, but nothing much more. It's snowed several times this winter already, which is pretty unusual for us....and it just seems like this winter is d-r-a-g-g-i-n-g on forever. I guess that's why lately, I've been feeling some "winter blahs." Not necessarily sad...not angry....not bored.....just blah. You know the feeling; unmotivated, tired, lazy, bad case of the "I don't want to's," just wanna curl back up and go to bed. That's me.
Just when I think the weather is getting nicer (60° today), we are expecting a cold front and more snow - yes, more snow - on Tuesday. Yuck. Stupid groundhog.
So ready for Spring to get here. I need to do some MAJOR spring cleaning, but first...I must shake these blahs so that I can find the motivation to do so. Sigh.....
